How To Make The Longboard’s Spicy and Citrusy Lava Rocks Cocktail

February is the ideal time for a tropical getaway 鈥 white sand, crystalline waters, balmy temperatures. If you can鈥檛 skip town, though, the next-best option is a trip to The Longboard in Dearborn, a concept restaurant that serves fresh West Coast food inspired by surf culture. But it鈥檚 the tiki-inspired drinks, like the Lava Rocks, that are the main draw. Keith Martin, The Longboard鈥檚 bar manager and the mixologist behind the drink, says, 鈥渂lood oranges are one of my favorite things to play with, so whenever they鈥檙e in season, I love to make a simple syrup to use throughout the year.鈥

How to Make Lava Rocks from The Longboard

Ingredients

2 oz. jalape帽o-infused agave or tequila

1 oz. home made blood orange syrup

1 oz. freshly squeezed lime juice

Jalape帽o ring and orchid flower for garnish

Blood Orange Syrup Ingredients

1 陆 cups juice from freshly squeezed blood oranges, strained (about 10 oranges)

1 cup sugar

Syrup Directions

In a small saucepan, bring juice and sugar to a boil. Lower the heat to medium and reduce until syrupy, about 20 minutes. Skim off foam and remove from heat to cool. Store in refrigerator.

Drink Directions

Add ice to a cocktail shaker. Then add agave, syrup, juice, and shake well. Strain the mixture and serve over fresh ice in a rocks glass. Garnish with a jalape帽o ring and orchid flower, and enjoy your Lava Rocks.
